    This is a great sauce cookbook, with all kinds of homemade sauces you can make to elevate your meals. There are not a lot of photos and there is no nutritional information, but this is a great compilation of recipes and I marked many to try. I received a digital ARC of this book from the publisher.

The recipes are well written and the photos will make you hungry – well, not me in regards to chimichurri as parsley and cilantro are so … gross. I so want eggs benny right now but it is too hot to cook… As always, I try to find a reason to not rate with stars as I love emojis (outside of their incessant use by "🙏-ed Social Influencer Millennials/#BachelorNation survivors/etc. " on Instagram and Twitter... The author includes a list of ingredients for success in making sauces, a food and sauce reference guide, equipment, and storage. Vegetable and Herb Sauces and Vinaigrettes include such recipes as Classic Red Wine Vinaigrette, Grilled Pork Tenderloin with Toasted Walnuts and Sorghum Sherry Vinaigrette, Classic Fresh Tomato Salsa, and Summer Heirloom Tomato Salad. Butter, Cream, Pan Sauces, and Gravies include such recipes as Classic Beurre Blanc, Lemon-Dill Mayonnaise, Best Ever Cheese Sauce, Giblet Gravy, and Herb Roasted Chicken with Giblet Gravy. I love that the recipes used whole ingredients as I am a bit of whole food fanatic - and since I need to learn to cook, this book was a great help teaching me basic skills about sauces - as my son says "if it tastes bad, drown it in mustard, ketchup and relish - maybe now he will eat sauce-covered foods that I can make vs buying condiments by the gallon at Costco! This is a great read as it will get you eating healthy food with great sauce... and learning some skills along the way. Maybe now I can get rid of the reputation I have for burning water!!! But there are many more recipes that make this an indispensable cookbook for all levels: curries, moles and sals *I received a digital ARC of this book from the publisher.* Chef Driskill has provided an excellent resource for home cooks. The Essential Homemade Sauces Cookbook takes the 'five Mother Sauces' into the twenty-first century and into the everyday kitchen. Here you can find the basics- Red Wine Vinaigrette, Pesto, Marinara, Bechamel, Hollandaise, every recipe a beginner cook would need. But there are many more recipes that make this an indispensable cookbook for all levels: curries, moles and salsas, gravies of all sorts, sauces for BBQ and stir-fries. If you're not sure what to do with a sauce, there are plenty of suggestions, even a few recipes. What really stood out to me was the friendly, we're-all-in-the-kitchen-together tone of the writing. Mark Driskill is a trained, professional chef and restaurant owner, but there is none of the ego that can be found with many other chefs, especially the male ones. I also appreciated the useful notes, charts, and tables, such as the Sauce Freezer Life table, telling you what can be refrigerated, what can be frozen, and for how long. (Genius!) This is a cookbook meant to be used, not put on your coffee table. I highly recommend this cookbook for home cooks from beginner to advanced.
