I have several America's Test Kitchen cookbooks. They are always my go-to cook books for multiple reasons 1) no processed ingredients 2) inexpensive ingredients 3) final dish tastes great. This book has many great recipes, however they are more complex and more expensive to make than recipes I normally cook from America's Test Kitchen. I consider this my cookbook for when guests visit, since cooking from this book everyday would exceed by grocery budget. I consider this my cookbook for when guests visit, since cooking from this book everyday would exceed by grocery budget. My other issue with the book, is that it contains no total cook times, which is normal for America's Test Kitchen. Several times, I have found myself cooking well past my normal meal time and into the late night, which an an issue, since I don't like to eat directly before sleeping. Every recipe I have cooked from this book has been delicious (except the chicken adobo 3/4 cup of vinegar is excessive), it just isn't a regular weekday cookbook for me, so I can't rate it higher than 3 stars since it isn't used regularly. There are also quite a few repeat recipes from other ATK cookbooks, which is a known issue with ATK.

Three and a half stars is more accurate but rounding up because ATK is quality even in excess. I have a number of Cook's Illustrated collections and several ATK books already so this really was more of a capstone purchase for me. I'm fully willing to blame my COVID-isolation mindset but in reading through most of the recipes I was fatigued instead of enthused to jump in. And yet, the Pork, Fennel, and Lemon Ragu with Pappardelle was absolutely delicious when I made it. So the quality IS here, if Three and a half stars is more accurate but rounding up because ATK is quality even in excess. These are definitely more "all out" recipes than daily dinners but really, isn't that what celebrating a 20th anniversary about?

I'm a faithful viewer of this PBS classic and have used many recipes, taken cooking advice, purchased tools recommended by their cooks and overall enjoyed the personalities of the host and chefs. Not only was I able to find the new season recipes but others that I had forgotten about and wanted to try again. My primary interest is in cooking and not baking. However, I may venture into baking with this cookbook as my guide. The Test Kitchen Anniversary Cookbook is a chef's dream. Not only does it have fantastic recipes (such as their Blondies), but they give you an explanation on why these ingredients and techniques have been chosen. The team is able to make complicated recipes understandable to new cooks without sacrificing flavor. The 20th anniversary contains the best of the show's recipes and there's something for everyone in every section. The Test Kitchen Anniversary Cookbook is a chef's dream. Loving reading through this... I opened it and then sat down and read the whole thing. I must be hungry or this is a well organized book. It has a great range of options and I lot of stuff I eat/ would love to eat. Now I just have to uh... make something in it! I’ll update my rating properly after that if I remember!

A weighty volume featuring best of recipes over 20 years. One page interviews and "factoids" from hosts are included in the beginning. Good photography, recipe introductions and directions. Several options from all the usual recipe index are offered. A huge volume but actually lays flat on your counter. Check this out for tried and true recipes. 4.5 rounded to 5.0 stars. The good - so many recipes, photographs, a section in the beginning telling the stories of the various ATK chefs, the excellent organization, the "why this works" paragraph that begins each recipe, and the variations at the end. The "bad" - this book must weigh 5 lbs! Seriously, though, this is in my Amazon cart right now, which is high praise, indeed. 4.5 rounded to 5.0 stars. Not my favorite ATK book so far - maybe skewed by current “no meat” mindset, but this particular book is meat heavy and does not have a separate section of veg dishes like some other ATK books do. Still planning on trying the asparagus shiitake stir fry and maybe a few others this month.
