    This is an oldie, but for sure a goodie. I you want basic pastry knowledge from a serious pro, then Payard is a Chef you should be paying attention too. Though his popularity is nothing what it was, he is an iconic pastry chef. This book is written clear with precise directions to start the foundation of any pastry career or home baking adventurist.
